Ingredients

Dressing

  • salt

  • pepper

  • 1/4 tsp. smoked paprika

  • 1/4 tsp. turmeric

  • 1 tsp. maple syrup

  • 1 tbsp. apple cider vinegar

  • 2 tbsp. lemon juice

  • 2 tbsp. olive oil

  • 1/2 cup fresh mint

  • 1/4 cup chopped almonds

  • 1 cup blackberries

  • 3 apricots halved and chopped

  • 1 cup chopped spinach

  • 2 cups cooked quinoa

Method

    Add the quinoa, spinach, apricots, blackberries, almonds and mint into a large bowl. Set aside.

    In the separate small bowl (or jar), add all the dressing ingredients. Whisk (or shake) until the ingredients are fully emulsified.

    Pour dressing over the salad ingredients and stir to combine. Taste and adjust salt and pepper as needed. Serve immediately!
