Maida Heatter's Chocolate Cheesecake Brownies in Cake Recipes,The year: 1983. The place: Williamsburg, Va., where representatives from across the globe — and “some of the biggest and brightest names on the American culinary scene” — gathered. The Times’s own Craig Claiborne planned the menus; Paul Prudhomme, Wolfgang Puck and Zarela Martinez cooked; and Maida Heatter provided dessert. Among her offerings were these, chocolate cheesecake brownies, “a formidable new creation” for the time. Here, a layer of pecan-studded brownie meets a sheet of chocolate cheesecake. Make them for a group — or for yourself to eat over time. They freeze well, and can just as well be served frozen.

Chocolate Cupcakes in Cake Recipes,Right or wrong I’ve always viewed the cupcake as a frosting transport system, and if you’re not a huge frosting fan (I’m not), then I figured, why bother? Then I remembered a friend had mentioned a recipe from Maida Heatter that was, in her words, a “grown-up cupcake.” I figured perhaps I owed the miniature confections a chance. Ms. Heatter’s recipe, modestly entitled, “Chocolate Cupcakes” from her 1974 book “Maida Heatter’s Book of Great Desserts,” produced a rich, moist crumb that relies on cocoa powder for its deep chocolatey flavor. But it’s her topping of semi-sweet chocolate ganache that separates these cupcakes from the crowd. No buttercream, no food coloring, and no diabetic shock after consumption. Just a really nice chocolate cake that’s a bit on the small side.
Chocolate Cupcakes
Minty Chocolate Holiday Cake Bites in Cake Recipes,Minty Chocolate Cake Bites! Incredibly easy and perfect for the holidays. It’s made with ZERO artificial colors or flavors and ZERO high fructose corn syrup. Boom. Fudgy, sparkly, minty if you want them to be, perfectly stored in the fridge for an after-dinner bite-sized dessert or five…
Minty Chocolate Holiday Cake Bites
Smores Waffles in Cake Recipes,In fact, zero good reasons why a waffle shouldn’t also hold a layer of Nutella and melty marshmallows. It might seem like overkill to add syrup to this smores waffle escapade, but just enough of a tiny drizzle to make the whole exterior sort of glow and glimmer. That’s normal, right? If the syrup was overkill, at this point finishing with something else feels even more unnecessary, but you guys, toasted coconut will take you on a magic carpet ride to smores waffle heaven. It’s toasty and golden and crunchy – and all that melty-smooshy yum needs some crunch in the mix. It’s a little more earthy, more mellow, and it sort of nails everything to the ground a little bit, making it entirely possible to eat a full-blown stack of these breakfast bombs. Smores Waffles with Nutella and Toasted Coconut – HELLO LOVER. brunch dreams coming true!
Smores Waffles
Lemon Ricotta Pancakes in Cake Recipes,Lemon and ricotta are a match made in heaven. You will find the pairing in many Italian desserts like cheesecakes, tarts, and torta di mandorle (lemon, ricotta, and almond cake), but with pancakes, you don’t have to wait until after dinner to enjoy this winning combination. Ricotta cheese adds a creamy richness to these pancakes without making them dense, and lemon brightens the batter. Whip the egg whites separately for an extra-fluffy stack! Perfect for a special weekend brunch, Mother's Day, or Father's Day.
Lemon Ricotta Pancakes
Pumpkin Cheesecake Bars in Cake Recipes,A simple cheesecake recipe that requires no water bath or springform pan and tastes like a creamy pumpkin pie. Baked in a 9-by-13-inch pan, these are sliced into bars that are easy to serve and eat. If you want to make them a bit fancier, you can reserve some of the plain cheesecake batters to swirl into the pumpkin batter just before baking.
Pumpkin Cheesecake Bars
Mango Cheesecake in Cake Recipes,Now, I love cheesecake and I love mangoes, the mangoes best eaten in their natural state, and preferably in the bath. But the two together make a dessert that manages to be both comforting and elegant. The scented flesh of the fruit does more than add to the taste of the cheesecake: it transforms the texture, too. This mango cheesecake reminds me of those light French fruit-mousse tarts, with their glassy, mirrored tops. And the color! The radiant, golden yellow is instant sunshine in the kitchen, just as the taste is summer on the tongue.
Mango Cheesecake
New York Maple-Walnut Cheesecake in Cake Recipes,Why doesn't maple syrup find its way to American cheese platters the way chestnut honey does to Italian ones? We think it works particularly well with subtle, creamy cheeses, a conviction that inspired our riff on a classic New York cheesecake. Enjoy the cheesecake plain or make the maple whipped cream or maple cream sauce to drizzle over slices. A warm purchased or homemade butterscotch or caramel sauce would be great on this cheesecake as well.
New York Maple-Walnut Cheesecake
Chocolate-Pumpkin Layer Cake in Cake Recipes,This rich and decadent spiced pumpkin cake is just the thing to serve for an autumn celebration, Thanksgiving or otherwise. Chocolate chips and chopped pecans are added to the pumpkin batter for extra sweetness and a bit of welcome crunch. For those who like to plan ahead, it can be made and frozen – iced and all. Just put the entire finished cake on a plate or a baking sheet, unwrapped, and freeze it overnight until it is hard. Then it can be wrapped without damage to the frosting, and returned to the freezer. Layers can also be wrapped well and stored, to be iced later.
Chocolate-Pumpkin Layer Cake
Gingerbread Cheesecake in Cake Recipes,The warm, spicy flavors of gingerbread are a natural match for cheesecake. I mean, who doesn’t love a slice of gingerbread cake slathered with cream cheese frosting? This dessert is certainly rich, but it is also packed with lots of spices, including a hefty sprinkle of both ground and fresh ginger, classic cinnamon, allspice that lends a slightly peppery note, and a bit of fresh lemon zest to brighten things up. It can be a little tricky to get the batter completely smooth, so make sure all the ingredients are at room temperature before you start mixing, and take care to bake the cheesecake gently to avoid cracks. The cranberry topping here is optional but it is festive and delicious, and a great little cover-up if the cheesecake does happen to crack. Alternatively, this is great with a bit of lightly sweetened whipped cream or crème fraîche. Slice cheesecake with a clean, hot knife for the tidiest servings.
Gingerbread Cheesecake
No-Bake Blueberry Cheesecake Bars in Cake Recipes,There are those who may not find this sweet enough, and if that’s the case I recommend adding a quarter cup or so of sugar instead of increasing the honey because you don’t want the honey flavor to become overpowering. Other flavor possibilities to add with the blueberries: any citrus you like; a teaspoon or so of very finely ground coffee or cocoa; or chopped raisins or, I suppose, chocolate chips. I prefer the straight honey-lemon combination, unadulterated.
No-Bake Blueberry Cheesecake Bars
Berry Coconut No-Bake Cheesecake in Cake Recipes,In the height of summer, turning on the oven should be considered off-limits, but we still need dessert. For that, there's the no-bake cheesecake, which has all the richness of the baked version without any of the baking. Here, Biscoff cookies add a bit of spice, which pairs beautifully with toasted coconut, and we swap the heavy cream for rich, fluffy whipped coconut cream. The topping combines cooked and fresh berries for a wonderful variety of texture and flavor. Just about any varieties will work here, so use what looks best. A combination of blueberries and blackberries or raspberries is quite nice. Be sure to plan ahead with this recipe. The cans of coconut milk need to be chilled at least overnight, and as does the finished cheesecake before it can be sliced.
Berry Coconut No-Bake Cheesecake
Creme Fraiche Cheesecake in Cake Recipes,This light cheesecake bridges the gap between those who love their cheesecakes tall and dense, straight out of Lindy’s, and others who prefer a daintier cake, made airy with farmer’s cheese or ricotta. Here, you’ll use cream cheese, goat cheese, and crème fraîche to concoct a light, fluffy cheesecake that isn’t too sweet, making it the perfect platform to show off a bunch of summer cherries, simmered in sugar. Or you could skip the cherries and eat it plain, or drizzle over some honey and toasted nuts.
Creme Fraiche Cheesecake
Rainbow Cake in Cake Recipes,This Technicolor cake is a project, but one you can pull off with a little elbow grease and lots of butter (nine sticks, to be exact). Most rainbow cakes call for coloring the individual layers of cake batter, but here, the frosting is tinted, creating an impressive rainbow inside each slice. The batter uses egg whites for a light, fluffy, just-sweet-enough layer cake, while the leftover egg yolks in the frosting make it smooth and creamy. We’ve included instructions for making the ombré and piped versions of the cake below, but you’ll need to make an extra half-batch of frosting for the piped version. A standard mixer cannot accommodate more than one batch of frosting at a time, so you’ll need to make the half-batch separately, then combine them before coloring and frosting.
Rainbow Cake
No-Bake Pumpkin Cheesecake in Cake Recipes,Figuring out how to make all of the pumpkin desserts during Thanksgiving while the turkey is in the oven can be a nightmare. That's why you need this no-bake cheesecake. It's a major time saver and while we love our classic pumpkin cheesecake, we go crazy for the no-bake option The gingersnap crust is a must and adds that extra layer of fall.
No-Bake Pumpkin Cheesecake
Perfect Cheesecake in Cake Recipes,The cheesecake should never be a source of anything except pure bliss. Not distress. Not frustration. Just dreamy, nonstop bliss. Cream cheese is a very important ingredient in cheesecake. Heavy cream or sour cream will do the job of softening the texture of the cheese and adding some moisture. You also need a few eggs to hold the cake together.
Perfect Cheesecake
