Juicy steak and veggies in one bite. Easy make-ahead roll-ups with tons of veggies and the best Asian marinade loaded with so much flavor. It can be grilled or pan-seared! Anything that’s stuffed or rolled is always, ALWAYS, a win in my mind, and these steak roll-ups are no exception. With an amazingly flavorful Asian marinade, these roll-ups are stuffed with four different kinds of vegetables – asparagus spears, zucchini, bell pepper, and carrots, although you can add more or fewer veggies to taste.

Ingredients

  • Sliced green onions, for garnish

  • Sesame seeds, for garnish

  • 1 Large summer squash, sliced into thin strips

  • 1 Large zucchini, sliced into thin strips

  • 1 Large red bell pepper, thinly sliced

  • 2 tsp. Extra-virgin olive oil

  • 1 pound Skirt steak, cut into thin 2"-long strips

  • 1/4 tsp. Cayenne pepper

  • 1 tbsp. Dijon mustard

  • 2 cloves Garlic, minced

  • Juice of 2 limes

  • 3/4 cup Brown sugar

  • 1 cup Low-sodium soy sauce

Method

    In a large bowl, mix together soy sauce, brown sugar, lime juice, garlic, Dijon and cayenne and whisk until combined. Add steak and toss until completely coated, then cover with plastic wrap and marinate in the refrigerator 30 minutes.

    Meanwhile, heat a grill pan or grill over medium-high heat. Brush with olive oil and add vegetables. Cook, stirring occasionally, until tender, 5 minutes. Remove from heat.

    Lay out a piece of steak and place a few veggies on top. Roll up and secure with a toothpick. Repeat until all steak and veggies are used up.

    To same skillet add steak roll-ups and cook until charred, 2 minutes per side for medium-rare.

    Garnish with sesame seeds and green onions and serve immediately.
