Homemade dumplings are easier to make than you think, and you can completely customize your fillings! It may look difficult to make Chinese dumplings at home, but the method is fairly simple once you know how to prepare them. I think part of the fun of making homemade dumplings is the process and the room for creativity. You can experiment with different ingredients for the filling based on your preference. The original Chinese dumplings are called Jiaozi. These dumplings consist of ground meat and vegetable filling that are wrapped into a thinly rolled piece of dough, which is then sealed by pressing the edges together. Finished jiaozi can be boiled, steamed, pan-fried ( we call potstickers), or deep-fried.

Ingredients

  • Soy sauce, for serving

  • 2 tbsp. Vegetable oil

  • 36 2-inch won ton wrappers

  • Kosher salt and freshly ground black pepper, to taste

  • 1 tsp. Mirin

  • 1 tsp. Sesame oil

  • 1 tbsp. Freshly grated ginger

  • 2 Green onions, thinly sliced

  • 1 cup Shredded green cabbage

  • 8 oz. Ground pork

  • 1 pound Shrimp, peeled, deveined and diced

Method

    In a large bowl, combine shrimp, pork, cabbage, green onions, ginger, sesame oil, mirin, salt, and pepper, to taste.

    To assemble the dumplings, place wrappers on a work surface. Spoon 1 tablespoon of the shrimp mixture into the center of each wrapper. Using your finger, rub the edges of the wrappers with water. Fold the dough over the filling to create a half-moon shape, pinching the edges to seal.

    Heat vegetable oil in a large skillet over medium heat. Add dumplings in a single layer and cook until golden and crisp, about 2-3 minutes per side.
