This vegan Chocolate French toast is made with tofu and banana. Tofu gives the necessary protein that egg would have provided in the traditional recipe. But tofu doesn’t firm up as much as an egg, so this French toast is slightly softer than the traditional egg version. But there is no telltale sign of tofu anywhere in this dish. First up is a Chocolate French Toast that happens to be 100% vegan. My kids love pancakes, waffles and French toast for weekend breakfast. I keep looking for new recipes to try for them.

Ingredients

  • Vegan Butter, for cooking

  • 1/4 tsp. salt

  • 1 tsp. vanilla extract

  • 3 tbsp. maple syrup

  • 2 tbsp. Cocoa Powder

  • 1 Small Banana, chopped

  • 3/4 cup Almond Milk Or other nondairy milk

  • 1/2 cup Silken Tofu

  • 8 slices Vegan Challah

Method

    Blend tofu, almond milk, banana, cocoa powder, vanilla extract, maple syrup and salt into a smooth mixture. Make sure there are no lumps. This is great to drink as is, almost like a creamy chocolate smoothie.

    Pour the tofu-cocoa mixture into a pie plate or a shallow bowl/ plate.

    Heat a griddle on medium-low flame. Add some butter to melt.

    Dip the bread in the tofu mixture for a few seconds on both sides. Place in the hot pan and cook for about 3~4 minutes on both sides, or until golden brown and crispy.
  • 05
    Keep the French toast warm in a 200°F preheated oven or serve right away with more maple syrup.
