You'll be ready to toss out all those extra pans after trying this one-pot pasta! I tossed this recipe together with what I had on hand, hoped for the best and was rewarded with a delicious dinner! I’m not a fan of heavily sauced pasta dishes, especially now that we finally have some nice weather in Saskatoon, so this hit the spot perfectly! A light, fresh pasta dish that doesn’t leave you feeling like you just ate a brick!

Ingredients

  • parmesan cheese

  • pepper

  • salt

  • 1 1/2 cups water (or broth)

  • 100 g uncooked spaghetti

  • 1 tomato (chopped)

  • 2 bunches spinach

  • 1 tbsp. olive oil

  • 1 clove garlic

  • 1 slice bacon

  • 1 red onion

  • 1 pound ground turkey

Method

  • 01
Mix ground turkey, red onion, bacon and garlic to shape 5 turkey meatballs.
  • 02
In a pan on medium heat, add olive oil. Once the pan is heated, add meatballs, cooking about 5 minutes allowing them to brown.
  • 03
Add chopped tomatoes and spinach, cooking for about 2 minutes. Add in pasta and water (or broth if you wish).
  • 04
Once water reaches a boil, turn heat to low and simmer with the lid on for about 20 minutes or until water reduces to form a light sauce. You could also add a splash of cream, or sour cream to the dish if you prefer a creamier sauce!
  • 05
Salt and pepper to taste. Garnish with plenty of parmesan!
