These cute bite sized appetizers are the perfect treat for your Easter gathering, or any gathering for that matter. The addition of the avocado unlike your normal deviled egg recipe, is very refreshing and different. And at this point, we won’t eat them any other way. It’s makes the filling even more creamy if you can believe it. YUM!

Ingredients

Yellow Egg Dye

  • 2 cups water

  • 1 tbsp. white vinegar

  • 6 tbsp. turmeric

Avocado Deviled Eggs

  • 1/4 cup pearl onions, minced

  • 2 tbsp. fresh cilantro, minced

  • 1 jalapeno peppers, seeds removed, minced (optional)

  • 1/2 cup cooked and crumbled bacon

  • 2 tsp. lemon juice

  • 1/4 tsp. black pepper

  • 1/2 tsp. salt

  • 1/4 cup mayonnaise

  • 1 ripe avocado

  • 10 hard-boiled eggs

Method

  • 01
    Slice eggs in half, and scoop out yolks. Set whites aside, and place yolks in a mixing bowl.

    Add mayonnaise, salt, pepper, lemon juice and avocado to the bowl with the egg yolks.

    Mix egg yolk mixture until mostly smooth and everything's combined. Stir cilantro, onion and jalapeno peppers, if desired, into the egg yolk mixture.

    Scoop or pipe avocado egg yolk mixture into the empty egg white halves.

    Top each egg half with crumbled bacon.

    Dye Eggs Yellow:Stir 6 tbsp. turmeric into boiling water; add 1 tbsp. white vinegar. Let eggs sit in dye for at least an hour.

    Refrigerate until ready to serve.
