Vegan Meatloaf Cupcakes with Cheesy Mashed Potato Frosting, that is. This was an easy, healthy and fun dinner. They’re full of Italian seasoning as well as chopped onions and bell peppers. Meatloaf is a clear winner for a weeknight dinner: It's a crowd-pleaser that just so happens to be easy.

Ingredients

  • ketchup

  • 5 cups warm mashed potatoes

  • red pepper flakes

  • 3/4 tsp. basil

  • 3/4 tsp. thyme

  • 1/2 tsp. marjoram

  • 3/4 tsp. rosemary

  • 1/2 tsp. parsley

  • 1 tbsp. oregano

  • 1/2 tsp. garlic powder

  • 2 tbsp. ketchup

  • 2 tbsp. beer mustard

  • 1 1/4 cups instant oats

  • 2 1/2 cups cooked lentils

  • 14 oz. container firm tofu, drained but not pressed

  • 1/2 sweet onion, diced

  • 2 stalks celery, sliced

  • 1/2 green bell pepper, finely chopped

  • 1/2 red bell pepper, finely chopped

Method

    Preheat oven to 350 degrees F. Spray two muffin sheets (you'll need 18-20, total) with non-stick spray.

    Mash the tofu in a large mixing bowl, then stir in all the other ingredients. Make sure everything is really well combined, then spoon the mixture into your muffin tins.

    Spoon a small amount of ketchup over the top, then bake for 35-45 minutes, or until a toothpick comes out clean.

    Top with the mashed potato "frosting" and serve immediately. Enjoy!
