  • optional toppings: almond butter, honey, cinnamon, yogurt

  • oil, for greasing the pan

  • pinch of salt

  • 1/2 tsp. ground ginger

  • 1 tsp. pumpkin pie spice

  • 1 tsp. cinnamon

  • 1/4 cup almond butter

  • 1/4 cup coconut flour

  • 2 large eggs

  • 1 1/2 cups fresh cranberries

  • 1 can (15 ounces) pumpkin

  • 2 cups rolled oats

Method

    Preheat oven to 350℉ and grease a glass 8x8 (or something similar) baking dish.

    Add all ingredients to a large bowl and mix well to combine. Pour mixture in the baking dish, spreading out evenly, and bake for 30 minutes until golden brown and cooked through.
