Ahhhhh, I can’t think of better food, to be honest. This super creamy, super easy, Lemon Beet Hummus. It’s such a simple variation of the traditional hummus, but those few ingredients make a HUGE difference.

Ingredients

  • 2 tbsp. Water

  • 1/2 tsp. Sea Salt

  • 1/2 tsp. Cumin

  • 1/2 tsp. Paprika

  • 1 tbsp. Garlic Powder

  • 1 tbsp. Olive Oil

  • 1 tbsp. Tahini Paste

  • 1 tbsp. Lemon Juice

  • 8 Whole Beets, canned

  • 15 oz. Chickpeas

Method

  • 01
    Add chickpeas, olive oil, lemon juice, water, tahini paste and seasonings to bowl of a food processor and pulse.

    Scraping sides down periodically, until chickpeas are pureed.

    Add beets and continue to pulse until hummus is creamy and has a consistent red color throughout.

    Serve with a side of toasted bread or with a selection of vegetables.
