This is the great debate of coleslaw recipes. Do you like coleslaw that is made with lots of different shredded vegetables and lightly dressed with tangy vinegar and citrus? Or are you a more traditional coleslaw person that loves a basic shredded cabbage that is dressed with a thicker and creamier dressing? Thankfully, this Pineapple Coleslaw is the perfect combination of a vinegar coleslaw and a creamy coleslaw recipe!

Ingredients

  • 1/2 tsp. Dijon mustard

  • 1 tsp. Lime juice

  • 1/4 tsp. Salt

  • 1 tbsp. Vegan mayo

  • 1 tsp. Maple syrup

  • 1 tsp. Chili powder

  • 1 tbsp. Apple cider vinegar

  • 1/4 cup Olive oil

  • 4 cups Finely chopped pineapple

  • 1/2 cup Chopped cilantro

  • 1/2 cup Diced red onion

  • 1 cup Matchstick carrots

  • 1 cup Sliced radishes

  • 1 cup Shredded purple cabbage

Method

    For the dressing, add olive oil, apple cider vinegar, chili powder, maple syrup, vegan mayo, salt, lime juice, and dijon mustard into a jar, cover tightly, and shake until all contents are combined.

    Mix purple cabbage, radishes, carrots, red onion, cilantro and pineapple into a large bowl. Pour dressing over all ingredients and toss well until all ingredients are covered with.
