Quick and easy Instant Pot Salsa Pork Chops use 2 main ingredients and very little hands-on time. Full of flavor, these juicy pork chops will satisfy even the pickiest of eaters! Season the pork with salt and pepper, brown it on both sides in the Instant Pot, toss in your favorite chunky salsa and cook. Always check for doneness with a thermometer and be sure that the pork is 145 °F.

Ingredients

  • Black pepper

  • Kosher salt

  • 24 oz. Chunky salsa

  • 3 tbsp. Olive oil

  • 6 Bone-in center cut pork chops, about 1/2 inch thick

Method

  • 01
Season pork chops with salt and pepper on both sides.
  • 02
Add olive oil to Instant Pot and turn on saute setting. When the oil is hot, brown pork chops 1 or 2 at a time. Cook each pork chop for about 1-2 minutes per side. Work in batches until all pork chops are browned.
  • 03
Add half of the pork chops back to the pot. Top with half the jar of salsa. Add remaining pork chops and top with remaining salsa.
  • 04
Place on lid and set valve to sealing. Cook on high pressure for 2 minutes. Allow the pot to depressurize naturally (this will take about 10 minutes). Check for doneness with a meat thermometer. Pork should register at least 145 °F.
  • 05
Transfer pork chops to a platter and use a slotted spoon to scoop out salsa and serve over the top of the pork chops.
