  • Shredded cheddar cheese

  • 4 cups Low-sodium beef broth

  • 12 oz. Tomato paste

  • 1 can Corn kernels, drained

  • 1 can Diced tomatoes, undrained

  • 2 cans Red kidney beans or small pink beans, drained and rinsed

  • 2 tsp. Cumin

  • 1 tsp. Onion powder

  • 1 tbsp. Salt

  • 2 tbsp. Chili powder

  • 2 tsp. Minced garlic

  • 1 1/4 cups Frozen diced onion

  • 2 pounds Extra-lean ground beef

Method

    Heat about 2 teaspoons olive oil in a nonstick skillet over medium-high heat. Cook beef, onion, and garlic in the skillet until beef is no longer pink. Drain.

    Place the beef mixture inside a large slow cooker. Add remaining ingredients and stir to combine.

    Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
