Fresh lemon zest and honey add sparkle to a midmorning brunch or weekend breakfast. These waffles are delicious! These waffles are a tad bit fancier and more involved than your standard waffle and would be great to have for Sunday morning breakfast. The fresh fruit piled on top is a must! The flavor of these waffles just goes so well with fruit. The first night we had them, I drizzled some of my homemade syrup on top, and then I discovered with the leftovers that they’re equally delicious with a generous dollop of vanilla yogurt instead (and healthier!). However you choose to eat these, I think you’ll really enjoy them.

  • Heavy whipping cream, sweetened, whipped, if desired

  • Maple syrup

  • Butter with canola oil

  • 2 tsp. Freshly grated lemon zest

  • 2 tbsp. Honey

  • 1/2 tsp. Salt

  • 1 tbsp. Baking powder

  • 2 tbsp. Sugar

  • 1/2 cup Butter, melted

  • 1 3/4 cups All-purpose flour

  • 3 Eggs, separated

Method

    Heat waffle iron to medium-high heat.

    Beat egg yolks using whisk in bowl until light yellow color. Stir in all remaining waffle ingredients except egg whites just until moistened.

    Beat egg whites in bowl at high speed, scraping bowl often, until stiff peaks form. Gently stir beaten egg whites into waffle mixture. Bake according to waffle iron directions or until golden brown. Repeat with remaining batter. Serve waffles with butter, syrup, whipped cream or fresh fruit, if desired.
