These Classic Dinner Pancakes are about as easy as pancakes can get, I put everything in one bowl, mix with a whisk and use my 1/4 cup ice cream scoop to immediately scoop onto a griddle. And you will love them. The best part of these Classic Pantry Pancakes is that they also make the best base pancakes for toppings and mix-ins.

Ingredients

  • 3 tablespoons Butter, melted

  • 1 2/3 cups Buttermilk

  • 1 teaspoon Sugar

  • 3/4 teaspoon Salt

  • 1 teaspoon Baking soda

  • 1 1/2 cups Flour

  • 3 Eggs

Method

    Separate eggs; beat egg yolks. Sift dry ingredients; add alternately with buttermilk to the beaten egg yolks. Add melted butter. Whisk the egg whites for about a minute and fold into the batter.

    Bake on hot griddle (400 degrees) until bubbles rise in the pancakes, about 3 minutes. Flip and cook another 2 minutes or until golden brown. Serve immediately.
