THIS EASY CHOCOLATE CHIP BANANA BREAD IS THE PERFECT SNACK FOR ANY TIME OF DAY! Banana bread is one of those things that you can have at any time of the day. I have been known to have it for breakfast more often than I probably should, considering it’s loaded with chocolate chips. I like my banana bread with some kind of addition — chocolate chips and/or walnuts usually, but you can totally leave both of those out and it would still be delicious.

Ingredients

  • 1/2 cup chopped walnuts optional

  • 1 cup semi-sweet chocolate chips

  • 1 tsp. salt

  • 1 tsp. baking soda

  • 2 1/2 cups all-purpose flour

  • 1 tsp. vanilla

  • 1/2 cup buttermilk

  • 1 1/2 cups very ripe bananas mashed, approx. 3-4 medium

  • 2 large eggs

  • 1/2 cup unsalted butter

  • 1 1/4 cups granulated sugar

Method

    Preheat oven to 350F and grease bottom only of a 9x5" loaf pan. In a medium bowl, whisk flour, baking soda, and salt to combine. Set aside.

    Cream butter and sugar until light and fluffy (2-3mins).

    Add eggs one at a time, fully incorporating after each addition. Add in bananas, buttermilk, and vanilla. Beat until smooth. Add in flour mixture and mix just until incorporated.

    Fold in nuts and chocolate chips. Pour batter into prepared pan and bake until a toothpick inserted into the center comes out mostly clean. Approx 1h 10mins.

    Cool in pan on a wire rack for 10mins. Loosen the sides of the loaf from the pan, remove, and place onto a cooling rack to cool completely.
