Birthdays are always accompanied by a birthday cake, but where does it say that the cake must be made of sugar, flour, and eggs? Some people just don't like dessert and this is for them! Picture the juiciest meatloaf, the fluffiest mashed potatoes, the crispiest fried onions, and the freshest green peas. Now picture them as a cake! I know this isn't your traditional birthday cake but remember it doesn't have to be your birthday to enjoy a nice slice of meaty cake!

Ingredients

Garnish

  • fried onion

  • cooked peas

  • 1 package bacon, cooked and crumbled

  • 1 cup butter, grated and chilled

  • 5 pounds russet potatoes

  • pepper

  • salt

  • 1/2 cup parsley, chopped

  • 1 1/4 cups bread crumbs

  • 3 eggs, beaten

  • 1/2 cup dijon mustard

  • 1/2 cup ketchup

  • 5 pounds ground beef

  • 4 cloves garlic, minced

  • 1 onion, diced

Method

    Preheat oven to 350 degrees F. Coat two 9 X 2 inch round cake pans with cooking spray; set aside. Melt butter in a medium skillet over medium heat. Add onion and garlic; cook until softened. Transfer to a large bowl; let cool.

    Add beef, ketchup, mustard, parsley, eggs, bread crumbs, salt, and pepper to bowl with vegetable mixture; mix thoroughly with your hands.

    Gently press into prepared pans. Bake 20 - 25 minutes. Let stand 5 minutes; carefully remove with a spatula, and transfer to a wire rack set over a rimmed baking sheet. Tent with foil.

    Meanwhile, prepare mash potatoes and cook and crumble bacon.

    Place 1 meatloaf on platter; spread 1 cup warm mashed potatoes over top. Sprinkle with 3 tablespoons of peas, crumbled bacon and fried onions. Top with remaining meatloaf. Frost top and sides with mashed potatoes.
