Roasted Garlic Mustard

  • Salt and pepper

  • ⅓ cup maple syrup

  • ½ cup Dijon mustard

  • 10 garlic cloves

Scallion-Bacon Ketchup

  • 1 tbsp. Worcestershire sauce

  • ¼ cup chopped scallions

  • ¼ cup chili sauce

  • ½ cup ketchup

  • 4 pc bacon, plus 1 Tbsp reserved drippings

Red Onion Marmalade

  • ½ tsp. pepper flake

  • 3 tbsp. cider vinegar

  • ¼ cup olive oil

  • 2 large red onions, diced

    Red Onion Marmalade: Cook red onion and olive oil in a skillet over low heat, covered, until golden, about 30 minutes. Add cider vinegar and pepper flake. Season with salt. Cook until thick, about 20 more minutes.

    Scallion-Bacon Ketchup: Cook bacon until crisp; drain on paper towels, reserving the drippings. Combine with remaining ingredients plus 1 Tbsp bacon drippings.

    Roasted Garlic Mustard: Roast the garlic cloves in foil for 30 minutes at 400°F. Squeeze the garlic out of its skin and puree. Combine with remaining ingredients.
