Ingredients

Mango Salsa

  • 1 lime (juiced)

  • 1 tbsp. fresh cilantro (minced)

  • 1 jalapeno

  • 1/4 cup red onion (minced)

  • 3 tomatoes (diced)

  • 1 mango (diced)

  • 1 tbsp. fresh cilantro chopped

  • 1/2 tsp. paprika

  • 1/2 tsp. ground cumin

  • 1 tsp. ground chipotle pepper

  • 2 tbsp. lime juice

  • 1/4 cup honey

  • 2 boneless, skinless chicken breasts

Method

    Preheat a grill to medium heat.

    Make mango salsa: Add the mango and tomato to a small bowl. Add the onion, jalapeno, and cilantro. Squeeze the lime juice over the top and mix together.

    In a medium bowl, combine the honey, lime juice, chipotle powder, cumin, paprika and cilantro.

    Place each chicken breast in it’s own foil basket. Pour the chipotle honey glaze over each chicken breast in the foil.

    Place the chicken in the foil on the grill and grill for 10-12 minutes per side.

    Remove from the grill, rest 5 minutes, then slice and top with the mango salsa. Mix and enjoy!
