Mixing the kale with a cabbage coleslaw blend makes this kale salad more approachable for those that aren’t kale super-fans. . . yet. The creamy poppy seed dressing brings it all together to make this the ultimate Kale Salad.

Ingredients

  • pepper

  • salt

  • 1 tsp. dijon mustard

  • 1 tsp. honey

  • 2 tbsp. lemon juice

  • 1/2 cup mayonnaise

  • 1 zest of lemon

  • 1/2 cup hulled pepitas

  • 1/2 cup shelled sunflower seeds

  • 1/2 cup dried cranberries

  • 1 bunch curly kale - stems removed, leaves chopped

  • 8 oz. cabbage

Method

    Combine cabbage, kale, cranberries, sunflower seeds, pepitas, and lemon zest.

    Make Dressing: mix mayo, lemon juice, honey, mustard, salt, and pepper.

    Pour dressing over salad and toss until evenly coated. Taste and add more salt/pepper to preference.
