Who doesn't love a good club sandwich? Check out this vegetarian version with Deli Meat and Bacon! What's not to like about having a bunch of your favorite things stuffed between two slices of bread and a side of chips? Club Sandwich usually made with turkey, bacon, lettuce, and tomato you’ll see it on almost every sandwich board menu wherever you go.

Ingredients

  • 2 tbsp. Fresh pesto

  • 1/2 cup Vegan mayonnaise

  • 2 Whole heirloom tomatoes, sliced

  • 1 Whole romaine lettuce

  • 5 oz. Deli turkey

  • 5 oz. Bacon

  • 2 tbsp. Olive oil

  • 1 Large french baguette

Method

  • 01
    In a pan heat the olive oil until hot and then add the bacon.
  • 02
    Cook until the bacon starts to bubble around the edges and then turn over and cook for another 3-4 minutes. Set aside.
  • 03
    Lay the bottom part of each sandwich on your cutting board. Mix the mayonnaise with pesto and spread on each slice of the baguette.
  • 04
    Place some slices of the deli meat on top of the spread followed by 2-3 leaves of the lettuce, sliced tomato and four slices of the bacon.
  • 05
    Top with the remaining baguette slice and serve at once.
