  • Fresh parsley

  • Pepper

  • Salt

  • 2 cups Leftover cooked turkey shredded

  • 8 oz. Pasta spirals

  • 4 sprigs Fresh thyme

  • 1 Bay leaf

  • 8 cups Turkey or chicken stock

  • 2 stalks Celery, ends trimmed and diced

  • 2 Carrots, peeled and diced

  • 3 cloves Garlic, minced or pressed

  • 1 Small white onion, peeled and diced

  • 2 tbsp. Olive oil

Method

    Heat oil in a large stockpot over medium-high heat. Add onion and garlic; saute for 4 minutes, stirring occasionally.

    Add carrots and celery and saute for another 3-4 minutes, or until the carrots are softened a bit.

    Add chicken or homemade turkey stock, bay leaf, and thyme. and stir until combined. Reduce heat to medium and simmer for an additional 10 minutes.

    Once the broth is fragrant, remove thyme and bay leaf and stir in the pasta and turkey. Continue cooking for 8-10 minutes or until the pasta is al dente. (Do not overcook).

    Season the soup with salt and pepper to taste and garnish with parsley.
