No summer picnic is complete without a fresh fruit salad, and this bright recipe, with a simple lemon-ginger dressing, fresh herbs, and a few soft mozzarella cheese balls, is my absolute favorite. You may notice that I got a little crafty and cut my melons into star shapes – I used a 2-inch cookie cutter, and I promise it wasn’t as fussy as it might seem :). Of course, you could just use a melon baller (or a knife) to save some time (and fun).

Ingredients

Lime and Honey Dressing

  • 1/2 tbsp. Lime zest

  • 1 tbsp. Honey

  • 1 tbsp. Lemon juice

  • 2 tbsp. Lime juice

  • 1 tbsp. Fresh mint leaves

  • 1 cup Watermelon

  • 1 cup Blueberries

  • 1 cup Raspberries

  • 10 Halved cherries

  • 10 Halved strawberries

Method

    To make the dressing warm up the honey for a few seconds in the microwave, then mix it with lemon juice, lime juice and lime zest. Set aside.

    In a medium serving bowl, combine cherries, strawberries, blueberries, raspberries and mint leaves. Drizzle the dressing on top and toss to combine.
