Everybody loves a good schnitzel and this one is not only quick and easy but super tasty. Chicken Parmesan is a classic Italian dish that is perfect for a weeknight dinner. Breaded chicken tenderloin is topped with tomato sauce and oregano and provolone cheese and served on top of pasta. This family favorite chicken dish is so easy to make. Double the chicken and you’ll have chicken parm subs for lunch the next day.

Ingredients

  • 1 1/2 tbsp. extra virgin olive oil

  • 500 g vine cherry tomatoes

  • 80 g provolone cheese

  • sunflower oil, to shallow fry

  • 2 eggs, lightly beaten

  • 75 g plain flour

  • 2 tbsp. chopped oregano leaves

  • 1 tbsp. finely chopped thyme leaves

  • 2 cups panko breadcrumbs

  • 4 chicken breasts

Method

    Combine the panko, thyme, oregano and 1 tsp salt in a bowl then place our egg in separate bowls.

    Flatten the chicken breasts slightly with a rolling pin, then individually coat in the flour, then the egg and then the panko mix.

    Preheat oven grill to high. Heat the oil in a frypan over medium-high heat. Add the chicken and cook for 4 minutes a side or until golden. Drain on paper towel.

    Place the chicken on a baking tray lined with baking paper. Top with torn pieces of cheese then adds tomatoes to the tray, drizzle with a little oil and season.
  • 05
    Place under the grill and cook for 4-5 minutes until golden and bubbling and tomatoes are starting to collapse. Serve scattered with extra oregano.
