Ingredients

Lemon Ginger Vinaigrette

  • 1/4 tsp. cayenne pepper

  • 1/4 tsp. pepper

  • 1/2 tsp. cinnamon

  • 1/2 tsp. maple syrup or honey

  • 1/2 tsp. sea salt

  • 1/2 tsp. fresh ginger grated

  • 3 tbsp. juice of a lemon

  • 1/4 cup olive oil

  • 1 clove garlic minced

  • 1/2 cup parsley chopped

  • 1/4 cup pepitas

  • 1/4 cup sunflower seeds

  • 2 cups rucola or other baby greens

  • 1/4 cup dates chopped

  • 1 cup carrots shredded (packed)

  • 1 cup chickpeas, cooked

  • 2 cups cooked quinoa

    Add all of the ingredients to a large bowl and top with the vinaigrette.

    Mix well, until fully combined, and serve. It can be served cold or at room temperature and is best after sitting for at least an hour.
