I’ve always been a big fan of bell pepper stuffed meals but more often than not, WHOLE bell pepper is just too much. Right? I end up eating about half of it and then waste the rest. This recipe is my attempt to avoid that. The meatloaf itself is a simple turkey meatloaf with a few extra veggies in there and the glaze is a minor adaption from my favorite meatless meatloaf from Ambitious Kitchen. We ate this all by itself (yay for lazy dinners!). AND it stays well in the fridge for a few days making GREAT leftovers.6 servings
Ingredients:
1 tbsp. Fresh parsley, for garnish2 cups Shredded Monterey Jack1 tbsp. Brown sugar1/4 cup Ketchup Freshly ground black pepper Kosher salt1 tbsp. Tomato paste1 clove Garlic, minced1/2 tsp. Fresh thyme leaves, chopped1/2 Onion, finely chopped1 tsp. Worcestershire sauce1 tsp. Egg, lightly beaten1 Bread crumbs1 pound Ground beef3 Bell peppers
