When we think of our last meal, our meatball sub typically gets tossed into the ring. Because a meatball sub is the definition of comfort: saucy meatballs, melty cheese, toasted bread — what more could you want? Our meatballs are what make it: a combo of diced celery, carrots, onion, and garlic and not just beef but also pork (the oldest trick in the book). The ingredient prep is worth it because then the meatballs bake while you can sit back and relax.

Ingredients

  • 1 cup Shredded mozzarella

  • 1 cup Marinara

  • 4 Hero rolls, sliced lengthwise

  • 1/2 pound Ground pork

  • 1 pound Ground beef

  • Freshly ground black pepper

  • Kosher salt

  • 2 tbsp. Ketchup

  • 1 Large egg

  • 1/2 cup Freshly grated Parmesan, divided

  • 3/4 cup Bread crumbs

  • 1 cup Freshly chopped parsley

  • 2 cloves Garlic, minced

  • 1/2 cup Diced onion

  • 1/2 cup Diced carrots

  • 1/2 cup Diced celery

Method

  • 01
Preheat oven to 400℉. In a large bowl, mix together celery, carrots, onions, garlic, parsley, bread crumbs, 1/4 cup Parmesan, egg, and ketchup and season with salt and pepper until well combined. Add beef and pork, mixing together by hand until just combined (don't over mix to maintain tender meatballs). Form 1 1/2" meatballs and place in an oven-safe dish or baking sheet. Do not overcrowd.
  • 02
Bake until meatballs are browned and no longer pink, 20 minutes.
  • 03
Meanwhile, toast rolls and warm marinara in a small saucepan. Spoon marinara over meatballs and top with mozzarella. Return to oven until cheese is melty.
  • 04
Place meatballs in toasted hero rolls and sprinkle with remaining 1/4 cup Parmesan before serving.
